Fish Cod (Gadus morhua) Allergen

Codfish allergy is triggered by the protein parvalbumin, a major allergen found in the muscle of many fish, including Atlantic cod (Gadus morhua). Symptoms can range from mild reactions like hives or itching to severe, life-threatening anaphylaxis. Parvalbumin is heat-resistant, meaning cooking doesn't eliminate it.
